Substitute pork or lamb for the chicken, if desired. Serve with pita bread, tomato and onion salad and garlicky tzaziki. A nice touch is to place a bay leaf between each piece of chicken when threading on to the skewers. Ingredients:
2 lbs boneless chicken breast cut in 1 1/2-inch cubes |
3 tbsp lemon juice |
3 tbsp olive oil |
1/4 cup dry white wine |
1 tbsp chopped fresh oregano or 1 tsp dried |
2 bay leaves |
salt and freshly ground pepper to taste |
Directions:
1. Place chicken in bowl and toss with lemon juice, oil, white wine, oregano and crumpled bay leaves. 2. Season well with salt and pepper. 3. Marinate for about 1 hour. 4. Slip the chicken on to skewers alternating with a bay leaf. 5. Place on grill and grill on high heat, lid down, for about 4 minutes per side (about 8 minutes altogether) or until the juices run clear. |
