Chicken Soup With Sweet Potatoes and Rice |

I made a whole chicken in the crock pot and ended up with about 4 cups of broth and some leftover chicken. Made this soup the other night and hubby loved it - wanted to post so I don't forget. Simple and delicious. Ingredients:
6 cups chicken broth |
1 large sweet potato |
1 medium onion |
2 carrots |
2 stalks celery |
1 1/2 cups cooked chicken |
1/2 cup brown basmati rice |
1/2 teaspoon dried basil |
1/2 teaspoon dried oregano |
1/2 teaspoon dried thyme |
salt |
pepper |
Directions:
1. Coarsely chop onion, carrots, celery. Place in large stockpot. (Can be sauteed in a little oil for deeper flavor.). 2. Peel and chop sweet potato. Add potato and broth to veggies. Simmer for about 1 hour until veggies are tender. 3. Add rice and chicken. Stir and cook for 30 minutes or until rice is done. 4. Add salt and pepper to taste. |
