This easy and comforting side dish tastes just like the vegetables in chicken noodle soup! It is also very good for you, with less than 50 calories per serving.
Ingredients:
1 can (14.5 oz) low-sodium chicken broth
3 cups sliced peeled carrots
2 ribs celery, sliced
1 small onion, chopped
salt and pepper to taste
1/2 tsp. dried parsley
1 bay leaf
Directions:
1. In a saucepan, heat chicken broth until it boils.
2. Add remaining ingredients, cook on high heat until broth boils again.
3. Turn heat to low; cover and cook until vegetables are tender.
4. Drain vegetables, reserving broth for another use.
5. Serve warm.
