These make a delicious meal. You can make them spicy or mild, how ever you want to do them. Great served with mexican rice and beans. Ingredients:
8 flour tortillas |
1/4 cup vegetable oil |
2 cups tomatoes, chopped |
1 cup onion, chopped |
1 large green pepper |
4 cups boneless skinless chicken breasts, cooked and shredded |
1/2 teaspoon thyme |
1/2 teaspoon cumin |
1 teaspoon chili powder |
3/4 cup chicken broth |
2 tablespoons cilantro (optional) |
salt and pepper, to taste |
Directions:
1. Heat oil in large skillet. 2. Add tomatoes, onions, and peppers; heat for 3-5 minutes. 3. Stir in chicken, thyme, cumin, chili powder, and chicken broth. 4. Season with salt and pepper. 5. Simmer for 15 minutes. 6. Stir in cilantro right before serving. 7. Heat tortillas. 8. Fill tortillas with mixture and serve. |
