Chicken, shrimp and Artichoke Casserole |

Ingredients:
1 1/2 cup(s) cooked chicken |
1/2 pound(s) cooked shrimp |
2 can(s) artichoke hearts drained and quartered |
15 mushrooms sliced |
2 shallots thinly sliced |
3 scallions thinly sliced |
1 teaspoon(s) worchestershire sauce |
1 tablespoon(s) butter |
2 cup(s) 1/2 & 1/2 |
2 tablespoon(s) butter |
2 tablespoon(s) flour |
3 tablespoon(s) sherry |
3 tablespoon(s) parmesan cheese |
Directions:
1. Grease casserole dish and add chicken, shrimp and artichokes. 2. In a large pan, melot 1 tbs butter and saute mushrooms, onion and scallions for 3-4 minutes. Add rest of butter and melt. Stir in the nflour and mix well. slowly add worchester, cream and whisk until smooth. Add salt and pepper to taste. Bring to a light boil over meduim heat. Let thicken to gravy consistency. 3. Pour over the chicken mix and top with parmesan cheese. Bake at 350 for 30 minutes until bubbly and brown. 4. Serve over noodles, rice or quinoa. |
