Chicken Saute With Mango Sauce |

A delicious, low-cal recipe originally from Eating Well. Surprisingly sweet and spicy! Ingredients:
1 tablespoon olive oil |
4 boneless skinless chicken breasts |
1/4 cup flour |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 jalapeno pepper, seeded and minced |
2 garlic cloves, minced |
2 teaspoons fresh ginger, minced |
1/2 cup reduced-sodium chicken broth |
1/2 cup orange juice |
1 tablespoon brown sugar |
1 teaspoon cornstarch |
1 cup diced mango |
2 tablespoons lime juice |
2 tablespoons cilantro, chopped |
Directions:
1. Heat olive oil in a large skillet over medium heat. 2. Trim visible fat from chicken breasts. 3. Combine flour, salt and pepper in a bowl, dredge each chicken breast in the flour mixture and place into skillet. 4. Cook until no longer pink in center, 4 to 5 minutes on each side. Transfer to a plate and cover to keep warm. 5. Add jalapeno, garlic and ginger to the pan, stirring until softened (1 to 2 minutes). 6. Add broth and stir for an additional minute. 7. Mix orange juice, brown sugar and cornstarch in a small bowl; add to the pan and stir until thickened (about 4 minutes). 8. Stir in mango and cook until heated through (about 1 minute). 9. Remove from heat and stir in lime juice. Spoon sauce over chicken and season with cilantro. |
