Chicken Saute with Artichokes, Lemon and Mint Ingredients:
1 1/2 lb chicken breast |
4 tsp olive oil |
8 oz artichoke hearts, frozen |
3/4 cup chicken stock |
1/4 cup fresh mint, chopped |
1 tbsp lemon juice |
1/4 cup feta cheese, crumbled |
Directions:
1. With a meat mallet, pound chicken to an even 1/2 inch thickness. Season with salt and pepper. 2. In a 12 inch skillet, heat 2 tsp oil on medium heat. Cook chicken 12 to 14 minutes, until browned on both sides, turning once/ Transfer to a serving dish and cover to keep warm. 3. Add remaining oil to skillet. Add artichokes and cook 3 minutes, or until browned, stirring occasionally. Stir in broth and heat to boiling on medium high. Boil 2 to 3 minutes or until reduced by half. Remove skillet from heat and stir in mint and lemon juice. 4. To serve, spoon artichoke sauce over chicken and top with feta. |
