Satay is an Indonesian-style kebab featuring small cubes of meat or poultry; the kebabs are usually served with a spicy peanut sauce. Although satay is often served as an appetizer, this version is hearty enough for a main dish. Ingredients:
12 chicken breast tenders (about 1 1/2 pounds) |
3 tablespoons fresh lime juice |
1 tablespoon low-sodium soy sauce |
2 teaspoons fish sauce |
2 garlic cloves, minced |
1/2 teaspoon crushed red pepper |
1 tablespoon canola oil |
3 tablespoons low-sodium soy sauce |
3 tablespoons fresh lime juice |
2 tablespoons creamy peanut butter |
1 tablespoon honey |
1 teaspoon grated peeled fresh ginger |
1 garlic clove, minced |

Directions:
1. Soak 12 (6-inch) wooden skewers in water 30 minutes. 2. While skewers soak, combine first 7 ingredients in a large zip-top plastic bag; seal and gently shake bag to coat chicken. Marinate in refrigerator 15 minutes. 3. Combine soy sauce and next 5 ingredients, stirring with a whisk. 4. Prepare grill. 5. Remove chicken from bag; discard marinade. Thread each chicken tender onto a skewer. Place chicken on grill rack coated with cooking spray. Cover and grill 3 minutes on each side or until done. Serve chicken with peanut sauce. |
