Chicken Sandwich (Working Title) |

Just another afternoon of experimenting with chicken on the grill. Ingredients:
2 boneless skinless chicken breasts |
1/4 diced white onion |
1 teaspoon fresh oregano, chopped |
1 teaspoon sweet basil, chopped |
1 lime, juice of |
1/8 cup cruzan black strap rum |
1 medium habanero pepper, chopped |
1 teaspoon chili pepper |
1 teaspoon ground cayenne pepper |
2 buns (if making a sandwhich) |
Directions:
1. In a 1 gallon plastic bag:. 2. Add two chicken breasts, thawed. 3. Add all dry ingredients. 4. Add all wet ingredients. 5. From outside of bag, massage all ingredients into chicken. 6. Let sit while preparing the grill (about 30 minutes). 7. On medium to medium-high heat, grill chicken, turning once and basting with remaining contents of bag. |
