Chicken Salad With Peanut Butter Dressing |

From the Publix Family Style magazine. You can make this salad by roasting your own whole chicken, or make it super easy by using a deli rotisserie chicken. Ingredients:
8 cups romaine lettuce, roughly chopped |
4 cups cooked chicken |
1 apple, cored and cut in wedges |
1 1/2 cups grapes, halved |
1/4 cup water |
1/4 cup creamy peanut butter |
1 tablespoon reduced sodium soy sauce |
2 teaspoons honey |
2 teaspoons cider vinegar |
1/4 teaspoon ground ginger |
1/4 teaspoon crushed red pepper flakes |
Directions:
1. On six salad plates arrange romaine, chicken, aplles, and grapes. 2. In a small bowl whisk together water, peanut butter, soy sauce, honey, vinegar, ginger, and crushed red pepper. 3. Drizzle peanut butter mixture over arranged salads. |
