Chicken Salad With Mustard And Egg |

I got this recipe from a friend of mine. Quite different from the way I make chicken salad, but I've eaten hers and it's delicious. She is a wonderful cook! Ingredients:
1 whole chicken |
3 stalks celery |
1 onion |
salt to taste |
pepper to taste |
water to cover chicken |
2 eggs |
1 tsp mustard |
1/2 cup sweet pickle relish |
1 tbsp sugar |
1/4 cup onions, finely chopped |
1/2 cup celery, finely chopped |
1 cup mayonnaise |
salt to taste |
pepper to taste |
Directions:
1. Coarsely chop the whole onion and 2 celery stalks and put in a pot large enough to cook your chicken in. 2. Add whole chicken, salt and pepper to taste, and enough water to cover chicken. 3. Bring to a boil and cook until chicken is done and starts to fall apart. 4. While chicken is cooking, hard cook the eggs, peel and chop finely. 5. Remove chicken from pot.. 6. Discard skin and bones and dice chicken. 7. Add chopped eggs, mustard, sweet pickle relish, sugar, finely chopped onions and celery and mayonnaise. 8. Stir together to mix. 9. Season with additional salt and pepper, if necessary, to taste. |
