From Fast Chicken / The Hawthorn Series Ingredients:
1 barbecued chicken, skinless and shredded |
2 cups grapes |
1 cup snow pea sprouts |
1/2 cup pecans |
mixed salad green |
75 g blue cheese, crumbled |
3/4 cup crouton |
1 egg |
2 teaspoons white wine vinegar |
3 teaspoons dijon mustard |
1 garlic clove, crushed |
1/3 cup oil |
Directions:
1. To Make Caesar Dressing: Place the ingredients in a blender and add the oil in a thin stream . 2. Combine the chicken with grapes, snow pea sprouts, pecans and Caesar dressing. Toss lightly and well combined. 3. Line a large bowl with the salad greens, fill with the chicken salad and garnish with the crumbles blue cheese and the croutons. |
