Chicken Salad The Way I Like It |

Just made it this morning. Loved it enough to write down Ingredients:
1 whole (2 halves) skinless boneless chicken breast, cooked (rotisserie or grilled will do, too) |
1 medium carrot |
2 stalks celery |
1/2 granny smith apple |
1/4 cup walnuts |
1/2 red bell pepper (optional) |
2-3 scallions (optional) |
2 tbsp mayonnaise |
2 tbsp plain yogurt |
1 tbsp spicy mustard |
1/2 tsp salt |
1/4 tsp ground black pepper |
1/2 lemon juice |
dash of sweet paprika |
fresh herbs of your choice |
Directions:
1. Chop or small-dice chicken and vegetables, finely chop herbs 2. Toss together in a bowl 3. Add condiments and seasoning, squeeze lemon juice 4. Mix gently to prevent mashing. 5. Serve inside the pita pocket or similar mediterranean bread. 6. * Cook time is for cooking chicken, but you can buy pre-cooked one |
