Chicken Salad Stuffed Pitas |

Wonderful as a light lunch and a good use of leftover chicken. Ingredients:
1/2 cup mayonnaise |
1/2 cup sour cream |
1/4 cup blue cheese, crumbles |
1/2 teaspoon fresh ground black pepper |
3 cups shredded romaine lettuce |
1 1/2 cups chopped cooked chicken |
4 center-cut bacon, slices cooked crisp and crumbled |
1/2 cup chopped celery |
1 cup grape tomatoes, cut in half |
salt & freshly ground black pepper |
4 (6 inch) whole wheat pita bread, cut in half |
Directions:
1. In a small bowl, stir together mayonnaise, sour cream, blue cheese and pepper. 2. In a small bowl, stir together mayonnaise, sour cream, blue cheese and pepper. 3. In a medium bowl, stir together lettuce, chicken, bacon, celery and tomatoes. Season with salt and pepper. Drizzle the sour cream/mayonnaise dressing over the chicken mixture; toss gently to coat.
