Ingredients:
3/4 cup nonfat sour cream
3 scallions, minced
1 tablespoon finely chopped fresh parsley
1/2 teaspoon grated lemon peel
salt
pepper
3 cups shredded cooked chicken breasts
8 large lettuce leaves
Directions:
1. In a medium bowl, combine the sour cream, scallions, parsley, lemon peel, and salt and pepper to taste. Toss well to blend.
2. Add the chicken and toss to coat.
3. Serve on a bed of lettuce leaves.
