This recipes is from the South Beach Diet Cookbook by Arthur Agatston. Ingredients:
3/4 cup nonfat sour cream |
3 scallions, minced |
1 tablespoon finely chopped fresh parsley |
1/2 teaspoon grated lemon peel |
salt |
pepper |
3 cups shredded cooked chicken breasts |
8 large lettuce leaves |
Directions:
1. In a medium bowl, combine the sour cream, scallions, parsley, lemon peel, and salt and pepper to taste. Toss well to blend. 2. Add the chicken and toss to coat. 3. Serve on a bed of lettuce leaves. |
