Chicken salad sandwiches made with plain yogurt. You may use low fat yogurt if you like. Some folks like the taste of vanilla or peach yogurt in this. An alternative to yogurt is to use mayo. Ingredients:
1 chicken breast |
1/2 c plain yogurt |
1 tbsp plain yogurt |
1 tsp tarragon |
1/4 c lemon juice |
1/2 tsp pepper |
1/4 tsp salt |
1/4 c raisins |
1/2 c onion |
1/2 c celery |
Directions:
1. Chop a fully cooked chicken breast. 2. Chop onions and celery. 3. Mix yogurt, tarragon, lemon juice, pepper, and salt. 4. Mix all ingredients together. 5. Serve on bread/pita/wrap/lettuce of your choice. |
