This salad is good with or without the bread. I made it ahead of time to blend the flavors. Ingredients:
2 cups cooked chicken, diced |
1 celery rib, diced |
2 hard-cooked eggs, diced |
1 small cucumber, diced |
1/2 cup low-fat mayonnaise |
1/4 teaspoon salt |
1/8 teaspoon dried mustard |
1/8 teaspoon white pepper |
8 -12 slices sandwich bread |
Directions:
1. In a bowl combine first 8 ingredients. Serve on bread. (Also good in sliced pita pockets). |
