Quick, easy chicken salad recipe for lunchtime sandwich. Good for leftovers. Ingredients:
1 cooked chicken breast |
2 tablespoons light mayonnaise |
1 teaspoon curry powder |
1/4 cup fresh cilantro |
1/4 cup red bell pepper |
1/4 cup yellow onion |
Directions:
1. Mince chicken, onion, bell pepper, and cilantro. 2. Add Spinblend 3. Mix with curry powder and some salt if you like to taste. If you don't have curry powder, try a little ground cumin or coriander. I like quite a bit of curry, but some might find it to strong so add a little, taste, and suit yourself. |
