An oldie from Southern Living. Ingredients:
2 (1/4 ounce) envelopes unflavored gelatin |
1 cup cold water |
1 (10 1/2 ounce) can cream of celery soup |
1 cup mayonnaise or 1 cup salad dressing |
2 tablespoons lemon juice |
2 tablespoons grated onions |
1/2 teaspoon salt |
2 cups chopped cooked chicken |
1 cup chopped celery |
1/2 cup sweet pickle relish |
1 (2 ounce) jar diced pimentos, drained |

Directions:
1. Sprinkle gelatin over cold water in a large saucepan; let stand 1 minute. 2. Cook over low heat, stirring until gelatin dissolves; remove from heat. 3. Stir soup and next 4 ingredients into gelatin mixture. 4. Chill until mixture is the consistency of unbeaten egg white. 5. Fold in chicken, celery, pickle relish, and pimento. 6. Spoon into a lightly oiled 6-cup mold; cover and chill until firm. 7. Unmold onto a lettuce-lined plate. 8. Cut into slices and serve. |
