Cream puff pastry filled with awesome chicken salad. You could do half with chicken salad and half with whipped cream for a little lunch/dessert. These are great for bridal/baby showers. Ingredients:
puffs |
1 cup water |
1/2 cup butter |
1/8 teaspoon salt |
1 cup flour |
4 eggs |
chicken salad |
2 cups cooked chicken, chopped |
1/4 cup red onion, chopped |
1 stalk celery, chopped |
1 tablespoon raisins |
2 teaspoons dijon mustard |
1/3 cup mayo |
1/4 cup plain yogurt |
1/2 teaspoon salt |
1/4 teaspoon dried dill |
Directions:
1. For puffs: 2. In med. saucepan combine water, butter, and salt. Boil. 3. Add flour all at once and stir vigorously. Cook and stir until mixture forms a ball. 4. Remove from heat and cool 10 minutes. 5. Add eggs one at a time, beating dough until smooth after each addition. 6. Heat oven to 400 degrees. 7. Drop by heaping tablespoons onto greased baking sheet. 8. Bake 30-35 minutes or until golden. 9. Let cool. 10. For chicken salad: 11. just mix all ingredients together. 12. To assemble, cut tops from puffs and remove the dough from inside. 13. Fill with chicken salad and replace tops. 14. Enjoy! |
