Not your usual leftover poultry. Ingredients:
1 pineapple |
4 to 5 cups cooked left over chicken or turkey, cubed |
1/2cup carrot, shredded |
1/2 cup celery |
1/2cup raisins |
1/2 cup dried cranberries |
6 tbsp. pecans, chopped |
1/2 cup mayonnaise |
1/2 cup vanilla yogurt |
4 tbsp. sweet pickle relish |
1/4 tsp. salt |
Directions:
1. Cut pineapple in half lengthwise, keeping leafy crown attached. Remove the inner portion in sections from one half, creating a boat. Repeat with remaining half for another use. 2. Remove woody core then cut sections into 1/2 chunks. 3. Combine pineapple with remaining ingredients. 4. Return mixture to the pineapple boat. |
