Homemade chicken salad using boneless, skinless chicken breast. Ingredients:
3 lbs chicken breast, skinless boneless |
2 1/2 ounces celery, diced fine |
4 1/2 ounces onion, diced fine |
2 ounces vinegar |
1 cup mayonnaise |
Directions:
1. Place chicken breast in a pot and cover with cold water. Season the water with your favorite aromatics (celery, onion and garlic) all rough chopped. Bring to a light boil and then simmer until done. 2. When done remove from the broth and let the chicken cool down. When cool chop the breast meat (as fine as you like it) and place into a large bowl. 3. Add the diced vinegar, onion and celery and mix well. 4. Place in fridge. Serve cold before serving. Serve on bread, crackers or as a salad topper. |
