A light summer dish of chicken and pasta that is quick and easy to make. Ingredients:
3 boneless skinless chicken breasts |
2 cups uncooked garden rotini pasta |
2 garlic cloves, minced |
2 cups broccoli florets |
1/2 cup water |
1/2 red sweet bell pepper, julienned |
1/2 yellow bell pepper, julienned |
salt and pepper |
1/4 cup parmesan cheese |
Directions:
1. Cook the rotini per package directions. 2. Cut the chicken breasts into bite-sized cubes. Add salt and pepper. Place in hot, oiled skillet with garlic and cook until done through. Add broccoli and water and cover skillet. Cook on high heat for 5 minutes or until broccoli is tender and water is gone. Add peppers, rotini and parmesan cheese. Mix together and serve. |
