Chicken is one of my favorite meats to cook and to eat! A boneless, skinless chicken breast is so easy to make into a wide variety of flavorful dishes. This is a favorite one. Needs 2 hours standing time. Ingredients:
1/3 cup sweet white wine, i prefer sauterne |
1 teaspoon dried rosemary, crushed |
3 tablespoons vegetable oil |
2 cups sliced fresh mushrooms |
salt and pepper |
4 boneless skinless chicken breast halves |
Directions:
1. In small bowl, combine wine and rosemary. 2. Let stand at room temperture for 2 hours. 3. Heat oil in lg skillet. 4. Saute mushrooms until lightly browned; remove from skillet. 5. Salt and pepper the chicken. 6. Cook chicken until browned on both sides; add a little more oil if necessary. 7. Return mushrooms to skillet. 8. Add wine and rosemary mixture. 9. Cook and stir for 2 minutes. 10. Cover and simmer for 10 minutes. |
