Old family recipe. Used to leave skin on and brown in 1/4 cup oil first. Rest the same. Ingredients:
8 chicken breast pieces, skinless, 4 half breasts |
2 tbs olive oil |
1 1/2 cup chicken broth |
1/2 onion, chopped |
3/4 cup celery, sliced |
1/2 teaspoon basil |
1 cup diced ham |
12 ounces tomato paste |
1/2 lb. spaghetti |
Directions:
1. Saute Chicken breasts in Olive Oil 2. Add ham, onion, celery, basil to olive oil. Simmer and stir for five minutes. Add stock or water, chicken breasts. 3. Cover and simmer 40-60 minutes 4. Garnish with parsley 5. Serve with spaghetti |
