Recipe with a good story from today's Birmingham News. In 1973, Julia Child visited Bham, AL to give some cooking demonstrations. She and her husband were hosted by a local man at his home. He and his partner had to COOK for Julia Child! Read more !!! The first night, they served this casserole. Julia loved it and asked for the recipe. She named it for one of her hosts. Ingredients:
three cups diced chicken |
two cups diced celery |
one cup diced onions |
one pound sharp cheddar cheese |
one can slivered almonds - maybe 8 ounces |
two cups mayonnaise |
bread crumbs |
Directions:
1. Preheat oven to 350 degrees; 2. Cook four chicken breasts and four chicken thighs with salt, pepper and celery tops until tender - around 20 minutes; 3. Cool and dice the chicken; 4. Saute diced celery and onions in a bit of butter and cool; 5. Cube the cheddar cheese; 6. Mix all of the above with two cups of mayo and almonds; 7. Place in a three quart casserole dish; 8. Sprinkle with bread crumbs; 9. Bake at 350 degrees until bubbly and golden on top - approx 20 minutes. 10. Note: Two teaspoons of curry powder added to the mixture is a great addition. |
