This is a simple dish for a quick lunch. Ingredients:
1 tablespoon olive oil |
1 tablespoon balsamic vinegar |
1/2 tablespoon lemon juice |
1/2 teaspoon ground ginger |
1/4 teaspoon turmeric |
1/4 teaspoon cumin |
1/4 teaspoon salt |
1/4-1/2 onion, finely chopped |
1 roma tomato, diced |
1 cup cooked skinless chicken breast, diced |
1 (15 ounce) can chickpeas, drained and rinsed |
1 -1 1/2 cup cooked rice, cooled |
Directions:
1. Mix the ingredients for the dressing together in a small bowl, set aside. 2. Place the salad ingredients in a medium glass bowl. Pour the dressing over top then stir until well blended. 3. Serve cooled or at room temperature. |
