Chicken & Rice Pilaf Casserole |

Easy, creamy chicken casserole. Ingredients:
4 boneless skinless chicken breasts or 4 cups leftover cooked chicken |
3 (6 1/8 ounce) boxes rice pilaf mix |
1/2 cup margarine |
1/2 cup flour |
2 cups half & half light cream |
2 cups chicken broth |
Directions:
1. Cook chicken breast in water until done. 2. Set aside 2 cups of chicken broth for later. 3. Cook rice pilaf according to directions on box. 4. Cut chicken into bite size pieces. 5. Mix chicken& rice pilaf in a 13x9 pan. 6. Melt the margarine in medium size pan. 7. Blend in the flour. 8. Add the chicken broth& mix well. 9. Add the half& half. 10. Stir over medium heat until mixture thickens. 11. Pour over casserole. 12. Bake at 350 degrees for 20-30 minutes. |
