A great way to use leftover chicken, this recipe will satisfy your hunger beyond belief! Ingredients:
2 lb chicken leftovers |
1/2 green bell pepper, chopped finely |
1/2 yellow bell pepper, chopped finely |
1/2 red bell pepper, finely chopped |
1 good sized onion, finely chopped |
3 cups elbow or bow-tie macaroni |
2 cups uncooked rice |
salt & pepper to taste |
1 tbsp oregano |
1 tsp garlic powder (not garlic salt!) |
1 cup chopped celery |
1/2 chopped carrots |
1 cup diced tomatoes |
1 can mushrooms, or 12-16 fresh, chopped |
old cheddar, grated (amount to your preference) |
mozzarella cheese, grated (amount to your preference) |
2 tbsp balsamic vinegar |
1 tbsp lemon juice |
1 tsp hot sauce |
Directions:
1. Cook the rice, preferably to the al dente stage (still some bite left in it) 2. In a saucepan (large) combine all of the afforementioned ingredients except the cheeses. 3. Simmer over low heat for 40 minutes, or until everything is tender. 4. Next, add the rice, and continue simmering until the rice is tender. 5. Plate it, and sprinkle with the cheeses. 6.
