2 cups cooked long grain rice |
2 cups (8 oz.) light monterey jack cheese (109296), shredded |
1 1/2 cups cooked chicken breast, chopped |
1 can (12 oz.) evaporated milk |
1/2 cups red onions, finely chopped |
1 large egg, lightly beaten |
2 egg whites |
1/4 cup fresh cilantro, finely chopped |
2 tbsp butter or margarine, melted |
1 tbsp jalapenos (11632), diced (optional) |
Directions:
1. PREHEAT oven to 350 degrees. Grease a 2-quart casserole dish. 2. COMBINE ingredients well in dish. 3. BAKE 45 to 50 minutes or until knife inserted in center comes out clean. |
