Ingredients:
2 cups cubed cooked chicken |
2 cups cooked rice |
1 (10 3/4 ounce) can cream of chicken soup |
1 (8 ounce) can sliced water chestnuts, drained |
1 (4 1/2 ounce) jar sliced mushrooms, drained |
2 celery ribs, thinly sliced |
3/4 cup mayonnaise |
1 tablespoon chopped onion |
1 tablespoon lemon juice |
1/2 teaspoon salt |
1/3 cup crushed saltine crackers (about 10 crackers) |
1 tablespoon butter, melted |
Directions:
1. In a large bowl, combine the first 10 ingredients. 2. Transfer to a greased 2 1/2 quart baking dish. 3. Combine the cracker crumbs and butter; sprinkle over the top. 4. Bake, uncovered, in a preheated 350° oven for 30-35 minutes or until bubbly. |
