Ingredients:
1 cup minute ready to serve brown rice |
1/2 cup (3 ounces) cooked chicken breast, diced |
1/4 cup chedder cheese, shredded |
1/4 cup salsa |
2 whole wheat tortillas |
chopped cilantro, optional |
fat free sour cream, optional |
Directions:
1. Prepare rice according to package directions. In a medium microwave-safe bowl, combine salsa and chicken. Microwave on HIGH two minutes. Stir in cheese and rice. Divide mixture onto tortillas and fold. Serve with cilantro and sour cream, if desired. |
