Easy southwest flavor Ingredients:
1/2 cup onion, chopped |
2 tablespoons butter |
7 cups cooked chicken |
1 tablespoon chili powder |
2 1/2 cups chicken broth |
1 (16 ounce) picante sauce |
1 cup long grain rice |
3 cups cheddar cheese |
12 flour tortillas |
Directions:
1. Saute onions in butter until tender. Stir in chopped chicken, chili powder, 1/4 cup of the broth and 3/4 cup picante sauce. Heat through and set aside. 2. Bring rice and remaining broth to a boil. Reduce heat, cover and simmer 20 minutes. 3. Stir in remaining picante sauce. Simmer 5 to 10 minutes. 4. Add chicken and cheese and spoon into warm tortillas. |
