Basically a homemade rice-a-roni with added chicken Ingredients:
4 cups boneless skinless chicken breast, cubed |
1 cup bell pepper, diced |
1 cup onion, diced |
3/4 cup salsa |
4 cloves garlic |
1 tbs soy sauce |
4 cups rice |
8 oz mushrooms, drained |
Directions:
1. Cook enough rice to have 4 cups when finished 2. In large skillet cook chicken seasoned to taste (I like Mrs. Dash Garlic & Herb) Do not use any added oil - just cover and cook over med heat turning once 3. Remove chicken when done - set aside 4. In pan add 1/4 cup water, bell pepper, onion, and mushrooms - saute until tender 5. While vegetables are sauteing cube chicken 6. Add cubed chicken, salsa, & soy sauce to vegetables 7. Add cooked rice just before serving - mix well |
