Comfort Food. You can use chicken breasts instead of chicken thighs if you are trying to lower the fat contents. I just prefer the flavor of the dark meat. Ingredients:
1 1/2 cups long grain rice |
6 ounce onion, chopped |
8 ounce mushrooms, sliced |
24 ounce boneless skinless chicken thigh |
1 tbsp butter |
10 ounce 98% fat free cream of mushroom soup |
10 ounce 98% fat free cream of chicken soup |
10 ounce french onion soup |
14 ounce fat free chicken broth |
Directions:
1. In a large sauce pot over medium low heat melt butter. Add onions and cook till tender. Add mushrooms, cook for approx 3 mins. Add uncooked rice. Stir until rice is warm and just starts to turn golden. Add all other ingredients. Mix well, cover and let simmer on low for about 45 mins or until rice absorbs most of the liquid. 2. Note: You may need to stir a couple of times during the cooking cycle to prevent the rice from sticking to the bottom of the pot. |
