Chicken Ratatouille

My family loves this dish. I tell my son it's from the Ratatouille movie and he gobbles it up!
Ingredients:
4 chicken breast halves, boneless and skinless
1 sm. eggplant; cubed
1 onion;sliced
1 green pepper; sliced
1/2 tsp garlic powder
1 tsp basil
1/2 c part-skim mozzarella cheese; grated
1 t. olive oil
2 sm. zucchini; sliced
1/2 lb. mushrooms; sliced
1 lg. tomato; seeded and cubed
1 tsp. dried parsley
Directions:
1. Lightly salt chicken.
2. Heat oil in lg. saute' pan.
3. Saute chicken about 2 min. per side
4. Add eggplant, zucchini, onion, mushrooms, and green pepper. Cover and cook 10 min.
5. Add tomato and remaining ingredients, except cheese.
6. Simmer 3-5 min. more,
7. Arrange chicken breast on top of vegetables and sprinkle cheese over the breasts.
8. Cook, uncovered, 1 more min. until cheesemelts.
9. Serve over rice.
