Chicken Ramen Pasta Salad

This is one of those love it or hate dishes. If you love blue cheese you probly will love it.
Ingredients:
2 3 oz packages of chicken flavored ramen noodles
8 cups fresh spinach leaves torn into bite sized pieces
2 cups cooked cubes chicken
1 cup red seedless grapes halved
1 cup diced red bell pepper
1/2 cup chopped cashews
1/2 cup crumbled blue cheese
4 cloves minced garlic
1/3 cup olive oil
1 lemon juiced
1/4 cup mayonnaise
1 red bell pepper cut into rings
Directions:
1. Prepare ramen noodles according to package directions reserving flavor packets for dressing
2. drain and cool noodles
3. cut noodles into bite size pieces
4. in a large bowl combine the spinach, cooked chicken, grapes, diced red pepper, cashews, cheese and noodles
5. in a small bowl combine flavor packets, garlic, and lemon juice
6. let stand for 15 minutes
7. add oil and mayonnaise and wisk until smooth
8. pour dressing over salad toss to mix well
9. granish with red pepper rings
