Veggies and chicken with hot pepper cheese...my boyfriend LOVES these! They are the one recipe I got from weight watchers that I still make even though I'm not using the weight watchers plan anymore! Ingredients:
2 tablespoons vegetable oil |
1 large onion |
2 cups chopped celery |
2 cloves garlic |
1 cup grated carrots |
4 cups cooked chicken |
1 cup fresh spinach |
4 ounces pepper jack cheese |
6 flour tortillas |
3 teaspoons vegetable oil |
Directions:
1. Heat a large, deep skillet and add 2 tablespoons vegetable oil. When oil is hot, add onion, and celery. Saute until soft and beginning to brown. Add garlic and carrot and saute another 1-2 monutes. 2. While vegetables are cooking, prepare chicken (I buy precooked, frozen, grilled chicken which makes this recipe take half the time!) and place in a large bowl. Add spinach. Stir in hot vegetables. Add cheese and combine well. (This can be prepared ahead to here, and refrigerated). 3. Arrange 1 cup filling on half of each tortilla, spreading to the edge. Fold tortilla over filling and flatten firmly with your fingers. 4. Lightly wipe skillet clean with a paper towel. Heat on medium using 1 teapsoon oil, spread evenly, for every 2 quesedillas. Two at a time, heat quesidillas through until tortillas are lightly browned but still soft. Halve and serve immediately. |
