I don't usually cook by measuring so there aren't going to be any measurments... I make these for my family and basically any friends who come over our place and everyone seems to love them! Ingredients:
*flour tortilla shells (as many as you need- every 2 shells will make 4 quesadilla quarters) |
*boneless, skinless chicken breast (how much depends on ho much chicken you want inside!) |
*mixed grated cheese (i use a mix of mexican and italian cheese for a nice balance) |
***seasoning salt |
*poultry seasoning |
*garlic powder |
*cumin (or packet taco seasoning) |
*ranch dressing |
*hot sauce and taco sauce (optional) |
Directions:
1. *Cut up chicken breast into small chunks or strips 2. *Preheat a large pan with a small amount of butter 3. *Start to cook chicken and add all seasonings to preference 4. *Add ranch to preference as well as hot sauce and taco sauce 5. *Cook till done 6. ***There are two ways I have cooked these- The oven method is great if you are making alot of these, but i prefer the buttery crispyness of the frying method*** 7. OVEN: preheat to 400 8. *Arrange half of the flour tortillas and top with one of the cheeses (as much as you like, I add alot!) 9. *Place however much of the cooked chicken on top 10. *Top with other cheese and second flour tortilla 11. FRYING: Preheat pan 12. *butter one side of each flour tortilla 13. *Place one flour tortilla, butter side down in pan and quickly assemble as stated above: cheese, chicken, cheese, second tortilla, butter side UP. 14. *Flip once during cooking 15. Cut into quarters and serve! 16. ***For those who like spicy, I add extra hot sauce after i place the chicken on the tortilla*** |
