Great with leftover chicken. Ingredients:
2 flour tortillas |
1/2 c chicken, shredded |
3/4 c mozzarella, shredded |
2 tbsp roasted red peppers, sliced |
1 tbsp sun dried tomatoes, sliced |
4 oz mushrooms, sliced |
Directions:
1. Place 1 tortilla on griddle 2. Layer with half the cheese 3. Layer with chicken, mushrooms, tomato slices, red pepper slices and the remaining cheese 4. Cook on Medium Heat until the bottom tortilla is crispy, the cheese is melted and the tortilla begins to brown 5. Flip and cook until the bottom tortilla is crispy, the remaining cheese is melted and the tortilla begins to brown 6. Cut into 6 slices, serve warm. |
