These quesadillas are fast and easy. You only need five ingredients. I usually cook mine on my panini maker, but these can easily be cooked on the stove in a pan. This is a very vesatile recipe. You can use beef instead of the chicken if you like. I usually use medium pace salsa. But you can use mild or hot if you like. These are great for lunch or a quick dinner. It is especially fast if you buy a deli roast chicken and use that so there is less clean-up! Ingredients:
8 flour tortillas (soft taco size) |
2 cups cooked chicken (i usually use deli roast chicken) |
1 1/2 cups colby or 1 1/2 cups monterey jack cheese |
1 cup pace medium salsa |
1/2 cup sour cream |
Directions:
1. Preheat greased skillet if cooking on the stove. 2. Lay one tortilla on a plate. Then add 1/4 of each of the ingredients. I rarely measure mine out. I just toss some filling ingredients on the tortilla in any order. 3. Lay other tortilla on top. I usually smash mine down a bit if there is a pile in the center. 4. You can cook these in a greased pan on the stove or in something like a sandwich maker. (I have a flat panini maker that cooks on top and bottom that works great.) 5. Cook on med-high heat till one side turns brown.(about 2 minutes). 6. Flip and cook the other side if using the pan method. 7. Cut into triangles and serve. I use a pizza cutter to cut mine and it works great. |
