Ingredients:
2 15-oz. cans white or yellow hominy, drained |
1 14.5-oz. can diced tomatoes, with juices |
1 cup low-sodium chicken broth |
1/2 tablespoon seeded, minced chipotle chili canned in adobo |
3 cloves garlic, finely chopped |
1 1/2 teaspoons cumin |
1 1/2 pounds boneless, skinless chicken thighs, trimmed of excess fat, cut into 1/2-inch pieces |
2 tablespoons chopped cilantro |
salt |
Directions:
1. Combine hominy, diced tomatoes, chicken broth, chipotle chili, garlic, cumin and chicken in a slow cooker. Cover and cook on low heat setting until chicken is cooked through and flavors have developed, 5 to 7 hours. Just before serving, stir in cilantro and season with salt. |
