Chicken Poppy Seed Casserole |

I first had this at a family reunion. Creamy and delicious! My hubby asks for this often. Ingredients:
4 -6 chicken breasts |
1 (10 3/4 ounce) can cream of mushroom soup |
1 (10 3/4 ounce) can cream of chicken soup |
1 cup sour cream |
3 tubes ritz crackers (crushed) |
1 cup margarine (melted) |
3 tablespoons poppy seeds |
Directions:
1. Preheat oven to 350 degrees. 2. Boil chicken until done and cut into bite size pieces. 3. In a large bowl stir together the sour cream and both cans of soup. 4. Stir in chicken. 5. In a seperate bowl, mix crackers, poppy seeds and melted butter until evenly coated. 6. Line the bottom of a large casserole dish with half of the cracker mix. 7. Pour chicken mix on top of cracker mix. 8. Top with the remaining cracker mix. 9. Bake for 40 minutes. |
