Chicken Pomme Cordon Bleu |

This is a basic Chicken Cordon Bleu with a carmalized apple topping instead of a traditional sauce. I used Canadian Bacon instead of ham because it is what I had, and it came out great. The bacon, swiss, and apple really go well with the chicken. Ingredients:
2 chicken breasts |
2 slices canadian bacon |
3 slices swiss cheese |
salt and pepper |
1 green apple |
3 tablespoons olive oil |
2 teaspoons brown sugar |
2 tablespoons butter |
Directions:
1. Pre heat oven to 400 degrees. 2. Pound the breasts till 1/4 inch thick and place even amounts of cheese and ham in the center. Roll them up like a jelly roll tucking in the cheese as you you, then secure with some toothpicks to hold. 3. Season the breasts with salt and pepper, brush with 1 tablespoon of olive oil, and place 1 tablespoon of butter on top of each chicken roll. 4. Place in a baking pan sprayed with nonstick spray, and bake for 20-25 minutes. 5. Core, peel, and slice apple, spritz with a little lemon juice to keep from browning. 6. Heat 2 tablespoons of olive oil over med high heat and place apple slices in, season with tsp of each salt and pepper, then mix in brown sugar. Let your apple cook for about 6 minutes. 7. Place apple slices over chicken and enjoy. |
