Another one from a Leggo's cookbook I want to try. Ingredients:
2 slices bacon, chopped |
1 onion, chopped |
1 carrot, chopped |
1 stalk celery, chopped |
3 tablespoons oil |
8 chicken drumsticks |
2 cups water |
2 chicken stock cubes |
240 g tomato paste |
2 -3 fresh rosemary sprigs or 2 teaspoons dried rosemary |
2 cups frozen broad beans |
salt & pepper |
Directions:
1. Heat 1 tblsp of the oil and saute the bacon & chopped vegetables for approx 5 mins, spoon into a large pot. 2. Add the remaining oil to the pan & lightly brown the drumsticks, then add these to the pot, stir in remaining ingredients. 3. Bring to the Boil, cover & simmer for 1 hour. |
