Chicken Pineapple Cilantro Salad |

A yummy salad I put together when I wanted to try chayote. I used Simply Organic Pineapple Cilantro Dressing. Ingredients:
3 ounces cooked chicken breasts |
1/2 avocado, diced |
2 -3 tablespoons black beans |
2 -3 tablespoons unsweetened diced canned pineapple |
2 tablespoons pineapple juice (from can) |
1/4 red bell pepper, julienne cut |
1/3 chayote, peeled and diced |
2 tablespoons corn (optional) |
1/4 cup fat-free salad dressing (pineapple cilantro lime flavor) |
2 tablespoons lime juice |
1/2 lime, to garnish and squeeze |
fresh cilantro, to garnish |
2 -3 cups mixed greens |
Directions:
1. Mix pineapple juice, lime juice, and dressing. 2. Build all other ingredients over the mixed greens, and drizzle with dressing. Squeeze limes over the salad as you enjoy! |
