A chicken and rice casserole that is just different enough to be interesting, Ingredients:
4 chicken breasts |
2 tablespoons margarine |
2/3 cup rice |
1/2 cup onion, chopped |
1 1/3 cups water |
1/4 cup raisins |
2 tablespoons parsley |
2 teaspoons chicken bouillon powder |
2 teaspoons orange peel |
1/2 teaspoon salt |
Directions:
1. Brown chicken in margarine. 2. Salt and pepper the chicken. 3. Remove chicken. 4. Cook rice and onion in the drippings. 5. Stir in remaining ingredients. 6. Bring to a boil. 7. Place rice mixture in a casserole dish. 8. Top with chicken. 9. Cover with foil. 10. Bake at 375* for 45 to 50 minutes. |
