My 6 year old son made up this entire recipe on his own. He is vey happy that it is very delicious, healthy and gluten free. I imagine the recipe is quite forgiving if you need to make any changes with the flours. His ideal side dish for this meal is boiled purple cabbage. Ingredients:
1 lb ground chicken |
2 cups cooked quinoa |
1/2 cup buckwheat flour |
3/4 cup chickpea flour |
3 eggs |
1 tablespoon curry powder |
1 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. cook quinoa in pan or rice cooker, 1 cup quinoa/2 cups water-about 20 minutes. 2. mix all ingredients together and form into patties. 3. fry in 1/2 inch oil over medium high heat or bake on an oiled pan in the oven at 350 until brown on both sides. |
