Chicken & Pesto Stacks Ingredients:
3 tbsp pesto |
3 tbsp water |
1 onion, cut crosswise into 4 sections |
2 yellow bell peppers, cut into quarters |
1 1/2 lb chicken breast, boneless |
2 tsp olive oil |
4 oz fresh mozzarella |
1 tomato |
Directions:
1. Preheat broiler. In a bowl mix pesto and water. Spray a jelly roll pan with cooking spray. Arrange onion on pan and brush with 2 tbsp pesto mixture. Place pan 6 inches away from heat source and broil 5 minutes. Arrange pepper on pan with onions and broil 12-15 minutes longer, until vegetables are tender, turning half way between cooking. 2. With a meat mallet, pound chicken to an even 1/2 inch thickness and season with salt and pepper. 3. In a 12 inch skilet, heat oil on medium/ Add chicken and cook 6 to 8 minutes, or until brown on both sides, turning once. 4. Top chicken with mozzarella. Cover and cook 2 to 3 minutes or until cheese melts and chicken is no longer pink. 5. The serve, place 1 slice onion, 2 slices pepper, 1 slice tomato and 1 piece chicken with cheese on a plate. Drizzle with pesto. |
