Chicken Pesto Pizza (Freschetta) |

Ingredients:
1 freschetta artisan wheat pizza crust |
2 ounce(s) basil pesto prepared |
3 1/2 ounce(s) mozzarella cheese shredded |
6 ounce(s) chicken breast cooked & diced |
2 roma tomatoes diced |
15 spinach leaves torn |
sea salt and evoo to taste |
Directions:
1. Preheat oven to 400 degrees with rack in middle position. Spread pesto evenly over pizza crust, leaving a 1/2 inch border for a crust lip. Top crust with remaining ingredients in this order: diced chicken, torn spinach leaves, diced tomatoes, and lastly, shredded mozzarella. Drizzle with olive oil and finish with sprinkle of sea salt. Place pizza directly on oven rack and bake for 12-14 min or until cheese is melted and beginning to brown. Remove from oven and cool for 2 min before cutting. |
